Originally built in 1898 the Hotel has gone through many changes and the original building has gone through a series of major and continuous renovations since 2001, with the accent on retaining the historical feel of this landmark building whilst providing all the modern amenities one would expect from a contemporary Hotel, such as free use of hard-wired HSIA in all rooms. The rooms and bathrooms have been completely overhauled and tastefully appointed. Our main bar, The Polo Tavern, is one of downtown Aiken’s most popular watering holes. Uzun bir aradan sonra (tatilin rehavetide üzerimden kalktı) tekrar mutfağa girmeye başladım. Çok sıcak olunca insanın yemek, pasta, börek yapasıda gelmiyor. Ancak ya misafir gelecek yada özel bir gün olması gerekiyor. Haftasonuda çaya misafirim vardı, önce hazır bir şeyler alayım dedim ama sonra hiç bir şey kendi yaptığım gibi olmaz diye karar değiştirdim. İyide yapmışım değişik bir kurabiye denedim. Aslında amacım "Devletşah"ın geçen hafta yayımladığı kurabiyeden yapmaktı ama ben yine kafama göre takıldım ve sadece  onun tarifinde kurabiyelerin içine fındık koymuştu bende öyle yaptım.

 

Malzemeler :

 

- 1 su bardağı un

- 1 paket hindistan cevizli puding

- 1 küçük fincan süt

- 125 gr. oda sıcaklığında erimiş margarin

- 1,5 tatlı kaşığı şeker

- 1 kase fındık

- 1 tatlı kaşığı kabartma tozu

 

Yapılışı :

 

Fındık hariç bütün malzemeleri karıştırıp hamur yaptım. Sonra küçük parçalar alıp içine 4 tane fındık koyup elimle yuvarladım ve top şeklinde yağlanmış fırın tepsisine dizdim. Bütün hamuru aynı şekilde kurabiye yaparak tepsiye dizdikten sonra üzerlerine birer tane fındık koydum ve 180°C önceden ısıtılmış fırında yaklaşık 20 dakika pişirdim. Pişen kurabiyeleri kapalı bir kavanozda saklarsanız bir kaçgün bayatlamadan dayanıyor.

Hamuru için:
- 120 gr. margarin (1 çubuk) - 1 bardak su - 2 tatlı kasığı seker - bir cimdik tuz - 1 + 1/4 su bardağı un - 4 hafif çırpılmış yumurta (yaklaşık)
İçini doldurmak için:
- 1 yumurta sarisi - 10 yemek kaşığı tozşeker - 2 yemek kaşığı un - 2 yemek kaşığı nişasta - 2bucuk bardak sut
Üst sosu için:
2 bardak su 2 yemek kaşığı nişasta 2 yemek kaşığı kakao 1/2 su bardağı tozşeker isteğe göre 1/4 bardak çikolata damlası veya normal çikolata (sosa istenilen kıvama göre daha fazla veya daha az su konulabilir)

Hamurun Yapılışı:
- Yağ, su, seker ve tuzu bir tencerede birleştirip arasıra karıştırarak kaynatın. - Kaynar kaynamaz altını kapatıp içine unu birden atıp tahta kaşıkla hızlıca karıştırarak yedirin. - Tekrar hafif ateşte tencerenin kenarlarından ayrılıp top gibi olana kadar yaklaşık bir dakika karıştırın. Ocaktan alıp 5-6 dakika ılınmaya bırakın. - Ilındıktan sonra içine yumurtaları azar azar elinizle veya mikserle yedirin. Kıvamı; hamur artik elinize hafifçe yapışacak, koyuca, seklini alacak bir kıvama gelmişse daha fazla çırpılmış yumurtadan koymayın. - Parsoment kâğıdı serilmiş tepsinize iki tatlı kaşığı ile sekil verip top top aralıklı olarak yerleştirin veya sıkma torbası ile sikin. - Önceden ısıtılmış 400F (200C) dereceli fırında 25 dakika kadar kabarıp kızarana kadar pişirin. Fırını kapatıp kapağını hafifçe aralayarak fırında 5 dakika kadar bekletin. Sonra çıkarıp ılınmaya bırakın. - Daha sonra krema torbasına düz uç koyup hazırladığınız iç kremayı doldurup profiterollerin yan taraflarından içine sikin. - Bir geniş servis tabağı veya tepsisine dizip üst sosunu üzerine döküp buzdolabında soğutup servise hazır hale getirin.
İç kremasını yapmak için:
- yumurta sarisi ve sekeri bir tencerede çırpma aleti ile karıştırıp un ve nişastayı ilave edip yine karıştırın. - Sütü ilave edip karıştırın. Ocağın altını açıp orta ateşte pişirin. Katılaşıp kabarcıklar çıkmaya başladıktan sonra 1 dakika daha pişirip altını kapatın. 1 paket toz vanilya ve 1 kaşık margarini ilave edip ılıtın.
Üst Sosu Malzemesi:
-Nişasta, seker, kakaoyu karıştırıp suyu ilave ederek koyulaşana kadar pişirin. Çikolatalarıda ekleyip eridikten sonra altını kapatıp fındık büyüklüğünde yağ koyup karıştırıp profiterollerin üstüne dökün.

ekleyerek bir sos hazırlayın. sosun içine muskat,
tuz ve karabiber ekleyerek ıspanaklarla karıştırın.
yumurtaların beyazlarını ayrı bir yerde kar halinde
çırpın. ıspanakların üzerine sarılarını alıp karıştırın.
daha sonra kar halindeki beyazları karıştırıp
bu karışımı yağlanmış sufle kaplarına paylaştırın.
üzerlerine kaşar peyniri rendesi serpin. kaşar
